IGP Paestum bianco
The first bottles of white wine produced by blending Fiano (50%) and Santa Sofia (50%) grapes.
A strong-textured white wine. It is brilliant, with a golden yellow shade and orange nuances. The olfactory experience is both complex and fine at the same time. Hints of dried apricot and vanilla prevail over everything else, creating the impression of a vigorous body. It has an intriguing nose that is confirmed at the first sip: full, with a clear saltiness, and a touch of acidity that makes it very interesting. To be tasted after a few years of ageing in the bottle.
Selected grape bunches were picked in the first week of September 2015. After the removal of the stalks and the pressing phase, the grapes fermented with the aid of the native yeasts present on their skin. Maceration of the grape skins was in stainless steel vats, where they reached the “0” Babo degree. They subsequently underwent the racking phase, after which the wine was transferred into wooden barrels for lees stirring. Bottled in August 2016 without sulphur dioxide or any clarification or filtering, the wine continued its ageing process for another 4 months.
